Guacamole with Pomegranate and Clementines

Serial Season 2 and my favorite Holiday Guacamole are getting me through the 5 o’clock hour. 😅 Avocado or good store bought guacamole Green onions, sliced Cilantro, chopped Lime juice Clementines, sectioned Pomegranate Seeds Another party in a bowl and in your mouth! I’m going to put this over grilled chicken breasts for dinner.

Coconut Cashew Chicken

Because I do plan on making dinner sometime this week (and aren’t these the most helpful for you?). This Coconut Cashew Chicken was so good and so easy! My kids said its their favorite chicken. Chicken breasts Coconut covered Cashews (Costco or Trader Joes) That’s it! I ground the nuts in my blender and covered the chicken in them. (I didn’t use any egg or flour but I’m sure you could). We grilled them on our #traeger but your oven or BBQ would be fine too. Trader Joes frozen Brown rice and frozen veggies are my go-to’s lately for a quick and healthy dinner.

Egg Nog Shake

True story. I went to the store to buy stuff for dinner (do they really all need to eat EVERY night?). I came out with ingredients for an Egg Nog Shake. Drove home and only then realized I had nothing for dinner. Scarlett won’t share with me so it’s really that good. Egg Nog Vanilla Ice Cream Salted Carmel Talenti Ice Cream Fresh Nutmeg Blend vanilla ice cream and egg nog (not too thick). Add a scoop of Salted Carmel ice cream and grate fresh nutmeg on top. HOLIDAY TIP- Fresh Nutmeg is a must!! It’s so good on so many things and doesn’t compare to the ground stuff.

Burratta with Pomegrate, Balsamic, and Mint

Christmas party on a plate! This is one of my favorite concoctions yet. Eat as an appetizer, salad, or like I’m doing, spread over (an entire) baguette. 😊 Burrata Cheese Pomegranate seeds Mint, julienned Pistachios, chopped Balsamic glaze or vinegar Serve with endive leaves or baguette slices For a salad add arugula or your favorite lettuce. Mix EVOO with balsamic and use chunks of Burrata or mozzarella instead.

Kodiak Cake Pearl Sugar Waffles with Lemon-Mint Syrup

2 C Kodiak waffle mix 2 C almond milk 1 box pearl sugar (Amazon) 2 eggs 3 TB butter Lemon Mint Syrup 1 C water 1 C sugar 1 lemon zested in strips and juice 1 handful of mint leaves Bring water and sugar to a boil. Boil for 10 minutes. Take off heat and add lemon zest strips, lemon juice, and mint. Let sit for 10 minutes. Strain out zest and mint leaves and serve with berries over waffles

Ahi Tuna Appetizer with Avocado Cream sauce

Ladies lunch today and this Ahi Tuna Appetizer was a big hit! It’s a couple of steps but well worth it! Save the leftover slaw and avocado sauce for the following night over brown rice and salmon. Tuna Steak Sesame Oil Sesame Seeds Sriracha Soy sauce ASIAN SLAW Shredded Cabbage/Broccoli Slaw Green onion, sliced thinly Red peppers, chopped Sesame Oil Soy sauce Ginger (optional) Wasabi paste Sugar Lime juice Cilantro, rough chopped WASABI AVOCADO SAUCE 1/2 C sour cream 2 avocados, diced Juice of one lime Dash of kosher salt Pinch cayenne pepper 1 tsp wasabi paste Dash of sugar Method: Fry wonton wrappers until Golden. Cut Ahi into bite size chunks. Toss with half of the chopped green onion, soy sauce, and Sriracha Combine all slaw ingredients and let sit. For Avocado sauce, blend avocados and sour cream until smooth. Add remaining ingredients and blend until incorporated.

Grilled Asparagus with Proscuitto, Parmeasean, and Egg

Lunch can sometimes be a bummer for Moms but this healthy dish would be delish for breakfast, lunch, or dinner! Grilled or roasted asparagus Prosciutto Shaved Parmesan *Poached or Soft boiled eggs S&P Pesto (optional) – I added a spoonful of pesto which was amazing on top! For DINNER add a chicken breast on top of asparagus with a green salad. *remember you can do your poached egg in the microwave!
