Almond Croissant French Toast

Try this indulgent Almond filled Croissant French Toast. The best part is you can serve them at the same time and not be flipping French toast all morning. Croissant (almond filled, chocolate, or plain) Egg, milk, vanilla, cinnamon mixture Frozen Berries Maple Syrup Orange Zest Soak croissants in egg mixture. Heat on griddle or pan as usual on each side. Once all are done, stick in oven at 350 for 10 minutes or until cooked all the way through. In saucepan heat berries until warmed. Add maple syrup to berries ( you won’t need a lot). Top French toast with berries and orange zest!

Steak and Egg Sandwiches

Snowy days call for Steak and Egg sandwiches with citrus chimichurri! Ciabatta bread Fried egg Steak, cooked medium and sliced (you could use chicken or pork instead) Avocado, smashed Arugula Chimichurri sauce Citrus Chimichurri – 1 part lime juice 1 part fresh orange juice Garlic, chopped Green onion, sliced Cilantro, chopped Parsley, chopped 2 parts EVOO Mix all ingredients and let sit for at least one hour. OPEN BIG!!

Kodiak Cake Pearl Sugar Waffles with Lemon-Mint Syrup

2 C Kodiak waffle mix 2 C almond milk 1 box pearl sugar (Amazon) 2 eggs 3 TB butter Lemon Mint Syrup 1 C water 1 C sugar 1 lemon zested in strips and juice 1 handful of mint leaves Bring water and sugar to a boil. Boil for 10 minutes. Take off heat and add lemon zest strips, lemon juice, and mint. Let sit for 10 minutes. Strain out zest and mint leaves and serve with berries over waffles

Egg, Ham, and Spinach En Croute

I’ve  been chowing on this En Croute I made for @studio5ksl today. It’s my mom’s recipe and my favorite holiday brunch item.   2 eggs 1 TB Mustard 2 tsp lemon juice 1 pkg frozen chopped spinach, thawed and well drained 4 hard-cooked eggs, chopped 1 cup chopped ham 1 C shredded Swiss cheese 1 sheet puff pastry In large bowl, beat 2 eggs well. Set aside 2 t. Blend in mustard and lemon juice. Stir in remaining ingredients until well combined. On lightly floured surface, roll puff pastry into a 15 x 9 inch rectangle. Brush lightly with some of the reserved beaten eggs. Spoon egg/spinach mixture down center of pastry. Fold both sides over to cover. Pinch to seal edges and ends of pastry. Place seam side down on lightly greased baking sheet. Brush top and sides with remaining beaten eggs. Cut 5 diagonal slashes in top. Bake at 425 until golden brown, about 20 minutes.

Easy Croque Madam

Did any of you see my easy Croque Madam on Fox? It’s perfect for breakfast, lunch, or dinner! INGREDIENTS: Prepared hollandaise sauce (Trader Joes) Gruyere or Swiss cheese, grated Brioche or Challah bread, toasted Ham, thinly sliced Eggs S&P METHOD: Preheat oven to 450 degrees. Cook poached or sunny side up eggs. Set aside. Place toast on a work surface and spread each piece with sauce. Cover sauce with cheese, a slice of ham. Top each sandwich with another piece of toast. Spread each sandwich with more sauce and sprinkle evenly with remaining grated cheese. Place sandwiches on prepared baking sheet, and bake until heated through, about 5 minutes. Add fried or poached egg on top of sandwich. Transfer baking sheet to broiler and broil until golden brown and bubbly. ETC. Making eggs for a crowd? Cook eggs (slightly undercooked) and put on cookie sheet. Before serving warm through and serve.

Ingreients: Steel cut oats Prepared Polenta (sold in logs at most grocery stores) Parmesan cheese Sharp cheddar cheese Poached or Fried egg S&P Method: Make oatmeal according to directions and add a couple of spoonfuls of polenta and mix through.
