Twice Baked Potato with Steak and Eggs

Leftover steak and potatoes becomes Twice Baked Potatoes with Steak and Eggs. Half potato and hollow out middle. Combine potato with a little cheese and sour cream. Fill potato skin with potato mixture and cook at 425 for 10-15 min. Top with scrambled eggs, sliced steak, and scoop of Trader Joes Bruschetta topping! ETC. Thinly cutting steak when it’s cold and then reheating makes it go a long way! Soft Boiled Egg Salad with Avocado Toast

Not sure why I would ever eat anything else for breakfast/brunch/lunch. Oh my! Soft Boiled Egg Salad with Avocado Toast Eggs Light Mayo Dijon Mustard Chives, chopped Avocado Lemon juice Sriracha Salt Pepper Crusty bread Boil eggs for 6-7 minutes. Take out and put in cold water. Mix a little mayo and mustard with chives and S&P. (Because the eggs are soft you don’t need much mayo and mustard). Chop eggs and add mayo mixture. Slice bread and top with avocado, a big squeeze of lemon juice, and S&P. Top avocado with eggs and top with chives and more S&P.

Chicken Pot Pie Gallette

My favorite take on Chicken Pot Pie, a savory Galette! Store bought pie crust Rotisserie Chicken, shredded Onion, diced Garlic Bag of Frozen corn, green bean, carrots and peas Mushrooms, sliced Chicken stock Flour Parsley S&P, or favorite seasoning Sauté onions, mushrooms, and frozen veggies in EVOO. Add 3 TB of flour until cooked through. Add shredded chicken. Add chicken stock as needed to moisten mixture. (For this you don’t want it as moist as a pot pie or it will run). Add your favorite seasonings. Put mixture in the middle of crust and fold crust around. Cook at 425 for 30 minutes or until golden brown (I like mine a little underdone). I went totally crazy with refrigerated flaky biscuits yesterday during nap time! My first creation was biscuit waffles with lemon curd and homemade jam. Let’s just say you can’t eat just one! Put biscuit in buttered waffle iron and cook until brown. Top with sweet or savory toppings.

Valentine Monkey Bread

My personal favorite: Valentine Monkey Bread 💕 Cut flaky biscuits into quarters. Toss all quarters in sugar. Put 4 quarters in a sprayed muffin tin and cook until slightly turning brown (10-15 min). As soon as you take out of oven pour warmed icing (strawberry or your favorite) over monkey bread and top with sprinkles!

Beignets

Mardi Gras 💜💚and this easy (naughty) recipe for with Praline Sauce go hand in hand! 1 package flaky biscuits 1 C butter flavor shortening, for frying 8 tablespoons butter 1 C dark brown sugar, packed 3 Tb milk 1 tsp vanilla 1⁄4 C toasted pecans, chopped Melt butter in a medium saucepan over medium heat. Add sugar and whisk until sugar melts and mixture begins to boil, about 5 minutes. Stir in milk, vanilla, and pecans until smooth. Set aside. Separate biscuits and cut into fourths. In heavy bottomed skillet, melt the shortening over medium heat. Fry biscuit quarters in batches until golden on each side (this will take 30 seconds or so so watch and flip quickly. Dust generously with powdered sugar and serve with sauce. You can also reheat before serving if not eating right away.

Breakfast Pizza for Dinner ❤️ Wheat Pizza Dough Cheddar cheese Soft Scrambled Eggs Kielbasa or Chicken sausage, sautéed at high heat Tomatoes, sautéed Green onions, chopped and sautéed Red Jalapeño, chopped and sautéed Goat cheese Arugula Stretch room temperature dough and drizzle with EVOO. Bake at 425 until just turning brown. Take out of oven and top with cheddar cheese, scrambled eggs, chicken sausage, green onions, tomatoes, peppers, and goat cheese. Bake for 8-10 more minutes. Top with arugula. Use anything you have in your kitchen for this pizza, this is just what I had on hand.
