Fruit and sparkling grape juice salad

You guys!! This fruit salad was over the top. It’s a take off on Pioneer Woman’s Orange and Champagne Salad. You can really taste the sparkling grape juice infused in the fruit and it’s so bright and refreshing! 5 Oranges, in segments 3 Mangos, chunks Watermelon, chunks Pomegranate Seeds 1/2 C favorite jam 1/3 C sugar 1/2 bottle of Sparkling Grape juice Mint Sliced almonds Toasted coconut Heat sugar and jam until combined. Pour over cut up fruit. Add sparkling grape juice to fruit and mix. Let sit overnight. I’m obsessed with Aloha Granola when I’m in Hawaii. Unfortunately they don’t sell it on Amazon, so you can make your own at home! Mango with Tajin

80 degrees calls for a summer favorite. Simple, fresh, and pops of flavor! Slice fresh mango to your preference. Drizzle fresh lime juice over fruit and sprinkle Tajin. Tajin is a seasoning made of ground chili peppers, salt, and dehydrated lime juice. You can buy it at most grocery stores or Amazon.

Granola Yogurt Cups

I’m in California this week so most of the recipes are going to be using leftovers from Easter and other things I’ve made from around the house over the last couple of weeks. I like to keep it simple and healthy after big holidays and parties. Use any granola you have around the house. I used my homemade granola from a previous post but most should work. Add Peanut butter and honey until combined and fairly sticky. I don’t know measurements but if I had to guess 2 C of granola to 1/2 C Peanut Butter and 1/4 C honey. I added a little vanilla extract too. Once it’s combined spray mini or regular muffin tins generously with coconut spray and fill with granola and shape in a cup. Freeze muffin tins for a couple of hours and take out right before serving. Fill with Geek yogurt and fruit.

Peach & Blackberry Galette

Ushering in summer with this fast and delicious Peach and Blackberry Galette. This is so easy you could pull it together tonight! Store bought pie crust (of course I love TJ pie crust) I don’t roll it out at all. I lay it out and add fruit. Mix 3 cups of sliced peaches, nectarines, berries or your favorite fruit add… 1/2 C Sugar 1 lemon zested 1 lemon juiced 3 TB cornstarch Mix and let sit for a couple of hours (or not). Add fruit to center of the pie crust leaving a 1 inch border. Fold crust around fruit and brush with egg wash. Bake or Traeger (AMAZING) on 400 degrees for 15-20 minutes. I slightly under cook mine so it’s soft and not crunchy. Happy Memorial Day!!

My girlfriend had me over for lunch the other day and made a salad with the most delicious dressing! She is the queen of salads and mine never taste as good. I tripled the dressing recipe so I’d have it for the next couple of weeks. And really, I’d eat it by the spoonful! 1/3 cup sugar 2 tbsp sesame seeds 1 tbsp poppy seed 1 1/2 tsp minced onion (I added a lot more and used purple onion) 1/4 tsp Worcestershire 1/4 teaspoon paprika 1/2 c veg oil 1/4 c apple cider vinegar (I used red wine and I think that’s fine too) Salad- Butter lettuce and Spinach Grilled chicken from last night Strawberries, blueberries, blood orange segments, orange segments Avocado Sliced almonds
