Fajita Salad

Tonight’s dinner was everything! Fajita Salad that EVERYONE liked makes it a new staple at our house. Quesadillas served along side or for scooping up salad kind of made my night. 😊 Onions and Bell peppers, sautéed Tomatoes (marinated in EVOO and balsamic) Avocado (lime, S&P) Cilantro, chopped Red Leaf Lettuce Wheat tortilla Cheddar cheese Flank Steak: marinated in EVOO, lime juice, cilantro, diced green onion, seasoned salt, pepper. Sauté onions and peppers on high to char. I bought them pre-sliced so I didn’t even have to chop. Marinate steak for 2-3 hours and bring out to room temp before cooking. Grill on high. Make quesadillas to serve on the side of just plain tortilla. Cumin Line Vinaigrette 2 parts Grape seed or Canola Oil 1 part Lime juice 1/2 part red wine vinegar 1 tsp cumin Handful chopped cilantro S&P

Italian Grilled Cheese

Come to Mama!! Italian grilled cheese for a snowy day and the leftovers make for a perfect breakfast with a fried egg on top! 1 loaf sliced sourdough bread Prosciutto, thinly sliced Salami, sliced thinly Pesto Olive Tapenade Roasted tomatoes or Sun Dried tomato Fontina or Provolone cheese, thinly sliced Mozzarella or Burrata, thickly sliced Arugula Pepperoncinis, sliced EVOO Preheat a grill-pan over medium-high heat. Spread one side of bread with pesto. Layer Fontina, prosciutto, tapenade, Salami, tomatoes, Pepperoncinis, arugula; end with mozzarella. Top with remaining bread. Brush top and bottom of the sandwich with olive oil. Place on grill pan and put a heavy skillet over sandwich to push it down (like a panini press). Grill 3 to 4 minutes on first side, turn, weigh down on other side, and continue cooking until sandwich is golden and cheese is melted, 3 to 4 minutes.

Snowy days call for Steak and Egg sandwiches with citrus chimichurri! Ciabatta bread Fried egg Steak, cooked medium and sliced (you could use chicken or pork instead) Avocado, smashed Arugula Chimichurri sauce Citrus Chimichurri – 1 part lime juice 1 part fresh orange juice Garlic, chopped Green onion, sliced Cilantro, chopped Parsley, chopped 2 parts EVOO Mix all ingredients and let sit for at least one hour. OPEN BIG!!

Pork with Fruit Chutney

Sear seasoned pork tenderloin in a frying pan with evoo. Take pork out and cook on Traeger or in oven at 400 for 20 minutes (cooking times vary depending in your tenderloin). In the same pan that you seared your pork add more evoo and sauté one yellow onion until tender. Add 1/2 cup apple cider 1/2 cup apple cider vinegar 2-3 Tb sugar hot pepper flakes cinnamon stick one thinly sliced apple a bag of dried mixed fruit (prunes, apricots, cranberries) Stir until incorporated and fruit is very soft. Add one bunch of Rainbow chard chard until wilted. Add zest of one orange and cook for another minute or so. Top pork with chutney and Enjoy!

Pulled Pork and Tri Tip

PREPARATION Pork shoulder Roast: Generously season all sides of the pork roast. Put the roast on the grill grate, fat-side up, and smoke for 3 hours, spraying with apple juice every hour after the first hour. Transfer to a disposable aluminum foil pan large enough to hold the roast. Increase the temperature to 250 degrees F, and roast for 6 to 8 additional hours, or until an instant-read meat thermometer inserted in the thickest part, but not touching bone, registers 190 degrees F. If the pork starts to brown too much, cover it loosely with aluminum foil. Carefully transfer the pork roast to a cutting board and let it rest for 20 minutes. Pour the juices from the bottom of the pan into a gravy separator. With your hands pull the pork into pieces. Season with additional rub and moisten with the reserved pork juice. Flank Steak with Mango and Pineapple Salsa

Taking dinner to a dear friend who has spent the last two weeks at the hospital with her baby. Hoping this flank steak fills up her hungry family! In a large ziplock bag add: Flank Steak 1/2 bottle of sesame soyaki sauce 3-4 gloves of chopped garlic 4 green onions, chopped Marinate the meat for at least 2-3 hours. Pull it out of the fridge so it gets to room temperature before you put it on the grill or Traeger. Grill on high (425) with the Traeger for about 6 minutes on one side and 2-3 on the other for medium rare. The best part about this recipe is the salsa that is homemade by.. Trader Joes and tastes amazing on steak. Have the salsa at room temperature and mix with a little red pepper for some kick and green onions to garnish the top. THAT WAS TOO EASY!

Creamed Spinach Burger

This is a healthier take on CREAMED SPINACH but you’re welcome to do a full fat version too. In 2 Tb EVOO sauté 2-3 chopped garlic cloves and 1/2 diced sweet yellow onion. After 5-7 minutes add 2 containers frozen spinach (thawed and drained). Cook through. Add a 1/3 C low fat cream cheese, dash of fresh nutmeg, and a healthy shake of S&P. Once cooked through add 3/4 (about..) 2% milk and simmer until liquid is cooked through. Add 1/2 C grated parmesan at the very end of cooking. Add more S&P if needed. BURGER- I used 96% extra lean ground beef. To raw meat I added 1/4 C Worcestershire sauce and S&p. Cook in a skillet until medium rare (it will keep cooking). Add 1/2-1 C of beef broth to the pan the burgers were cooked in and deglaze and reduce drippings and broth. TOAST good white bread and lightly butter. Add burger, creamed spinach and top with Trader Joes Fried Onion pieces.

Filet Mignon Piadine

Store-bought pizza dough, I think Whole Foods has the best one. Slather with EVOO and put directly on the grill or Traeger. Romaine and Red leaf lettuce Traeger grilled green onions and asparagus cut up TJ frozen corn heated through tomatoes Grated Parmesan Grilled Filet – coat with EVOO and your favorite rub. I like seasoned salt and pepper. Let sit to room temperature then grill until medium rare. Let sit for 10 minutes and slice thinly. / I used my red wine vinaigrette dressing that’s in a previous post.
