Twice Baked Potato with Steak and Eggs

Leftover steak and potatoes becomes Twice Baked Potatoes with Steak and Eggs. Half potato and hollow out middle. Combine potato with a little cheese and sour cream. Fill potato skin with potato mixture and cook at 425 for 10-15 min. Top with scrambled eggs, sliced steak, and scoop of Trader Joes Bruschetta topping! ETC. Thinly cutting steak when it’s cold and then reheating makes it go a long way! Greek 7 Layer Dip

A twist on your favorite 7 layer dip and my favorite healthy Super Bowl snack. Layer: Onion and chive cream cheese Hummus Tomato, chopped Cucumber, chopped Olives, sliced Green onions, sliced Feta, crumbled Dip with Sea Salt Pita Chips Leftovers are great in a chicken wrap for dinner the next night!

Brisket Hash

Leftovers that make you go hmmmm BRISKET HASH Shredded potatoes (bagged) Leftover Brisket (or chicken, pork, turkey) Leftover Broccolini with Shallots (any greens) Poached eggs Salsa Guacamole Jalapeños ETC. For crispy hash browns you have to use oil on your pan or griddle. Spray won’t do the trick. More oil=more crisp. Leave the hash browns down for at least 10 minutes and press them down but don’t check on them. Season with seasoned salt and pepper. Once ready to flip, re-oil the pan to get the other side crispy. Season salt second side and leave for another 10-15 minutes. It will take longer then you’d think.

Thanksgiving Benedict

My Thanksgiving Benedict has been nominated for the TODAY SHOW Food Club contest. I will be forever in your debt if you vote for me!! http://community.today.com/foodclub/recipe/thanksgiving-eggs-benedict  😘 This Thanksgiving Benedict is even better than the real day! 2 1/2 C Stuffing or Stovetop stuffing 2 eggs, beaten Turkey breast, sliced 4 Eggs, poached or fried Gravy Cranberry sauce Add an egg or two to your stuffing and mix it all together to form a patty. Sauté the stuffing cake in EVOO until brown and cooked through on both sides. Top with turkey and a poached egg. Drizzle gravy and a dollop of cranberry sauce on top. (Heinz Homestyle Gravy wins all the awards for best jarred gravy.)

Fancy Scrambled Eggs

Who feels like cooking tonight? Not me, we’re doing takeout. If you’re home for the night preparing for Christmas, my favorite clean out the fridge/no hassle cooking is “fancy” scrambled eggs. I add leftovers, lunch meat, produce, whatever I can find to make it healthy, filling, and pretty darn tasty! I started with sautéing ham, leftover asparagus, tomatoes, fresh spinach, and green onions. I then added the eggs and topped with parmesan. Dinner and done!

Bruschetta Chicken Salad with Brie Croutons

Dinner last night was based on having Brie cheese that needed to be put to use before it went bad. It’s also a salad take on one of my favorite dips (that I’ve posted before). I raided the kitchen and was pretty happy with the end result! Mix of butter lettuce and arugula Sliced leftover grilled chicken beast Instead of dressing I made a bruschetta topping of tomatoes, garlic, green onion, EVOO, balsamic glaze, and s&p. Sourdough Brie cheese “croutons”. Broil your favorite bread with sliced brie cheese. Top with kosher salt and cut into squares. Top with julienned basil, more balsamic glaze, and toasted pine nuts.

Hash Brown waffles and Soft Boiled Eggs

Last nights leftovers were better then the real thing. Soft boiled eggs a favorite Hash Brown waffles- store brought shredded hash browns put on a greased waffle iron (so easy)! Carne Asada off the Traeger Leftover salad fixings – Trader Joes frozen corn, TJ’s frozen onions and peppers black eyed peas edamame (I added this to lettuce with other things the night before but add chicken and you have a full meal) Grilled asparagus on a HIMALAYAN SALT BLOCK (more info on that later)
