Twice Baked Potato with Steak and Eggs

Leftover steak and potatoes becomes Twice Baked Potatoes with Steak and Eggs. Half potato and hollow out middle. Combine potato with a little cheese and sour cream. Fill potato skin with potato mixture and cook at 425 for 10-15 min. Top with scrambled eggs, sliced steak, and scoop of Trader Joes Bruschetta topping! ETC. Thinly cutting steak when it’s cold and then reheating makes it go a long way! Goat Cheese, Mango, and Steak Salad

Steak, Goat cheese, and Mango Salad One of my goals on here is to help you become more comfortable with inviting friends to “life at your table”. Wether it’s a diet coke and peanuts during a play date or neighbors over for dinner, invite someone over. I promise it will be worth the effort! This salad can be done ahead of time and looks fancier then it is. Red leaf and butter lettuce Avocado, sliced Asparagus, roasted and chopped Mango relish- Store bought pineapple salsa with fresh mango and cilantro (tastes homemade) Grilled shrimp, steak, or chicken Goat cheese log Macadamia nuts, chopped or ground in blender Asian Soy dressing- combine 1/2 C EVOO 2 Limes, juiced 1/3 C Red wine vinegar 2-3 TB Soy sauce 1 TB garlic 2 green onions, chopped Dash of sugar Dash of Sesame oil Ground pepper Macadamia Goat cheese patty – Squish goat cheese into disk shape. Flank Steak with Mango and Pineapple Salsa

Taking dinner to a dear friend who has spent the last two weeks at the hospital with her baby. Hoping this flank steak fills up her hungry family! In a large ziplock bag add: Flank Steak 1/2 bottle of sesame soyaki sauce 3-4 gloves of chopped garlic 4 green onions, chopped Marinate the meat for at least 2-3 hours. Pull it out of the fridge so it gets to room temperature before you put it on the grill or Traeger. Grill on high (425) with the Traeger for about 6 minutes on one side and 2-3 on the other for medium rare. The best part about this recipe is the salsa that is homemade by.. Trader Joes and tastes amazing on steak. Have the salsa at room temperature and mix with a little red pepper for some kick and green onions to garnish the top. THAT WAS TOO EASY!
