I went totally crazy with refrigerated flaky biscuits yesterday during nap time! My first creation was biscuit waffles with lemon curd and homemade jam. Let’s just say you can’t eat just one! Put biscuit in buttered waffle iron and cook until brown. Top with sweet or savory toppings.

Gourmet Toast

Gourmet ” Toast ” for dinner tonight. This twist on a favorite appetizer was so good! Toasted Naan Bread Roasted Garlic Macadamia Nut crusted Goat cheese Grilled Chicken Spinach and kale mix EVOO and balsamic vinegar Sun dried tomatoes Basil Grill naan. Roast garlic for 1 hour at 350 (in aluminum foil with EVOO and salt). Spread garlic on naan. Blend macadamia nuts until ground and cover goat cheese patty. Sauté in EVOO. Spread over naan. Chop spinach and kale and mix with balsamic and EVOO. Top naan with spinach, chicken, chopped sun dried tomatoes, and julienned basil

Apple Oatmeal Snack

This late-night snack blows my three bowls of cereal out of the water. Now it’s an after school, breakfast, and nothing in the fridge favorite. Apple, middle cored out Oatmeal, cooked Brown sugar Cinnamon Pecans Kosher salt Core out middle of the apple and cut up to add to oatmeal. No Chop Vegetable Soup

Keeping with the detox program (for part of my day) here is an easy peasy NO CHOP Vegetable Soup. I make this soup every New Years and it starts us off on the right foot. Pre-chopped Mirapeaux (carrots, celery, onion) Trader Joes or local grocery store prepared food area Bagged Broccoli slaw Bagged Cole slaw 1 TB Jarred garlic 3 Cans Fire Roasted diced tomatoes with garlic 1-2 cartons Vegetable or Beef stock (I love the depth of flavor with the beef stock) 3 Zucchinis (shoot, you do chop these) Frozen corn EVOO S&P Spices Drizzle EVOO in a large pot. Add Mirapeaux and cook until soft. Add garlic, broccoli and cole slaw. Add S&P and bay leaf or thyme sprigs. Cook until soft and add favorite spices (garlic or onion salt, pepper, basil, oregano, etc). Add canned tomatoes and a little sugar if you want. Add broth then Zucchini slices and corn. Bacon Carmel Popcorn

I couldn’t wait another minute to share this recipe with you. BACON CARMEL POPCORN WITH SMOKED SALT • 1-2 gal. Prepared Popcorn • 2 cups Brown Sugar • 1 cup Butter • 1⁄2 cup Corn Syrup or 1⁄2 cup Maple Syrup • 1⁄2 tsp. Baking Soda • 1⁄2 tsp. Salt • 1 tsp. Vanilla • 2 cup smoked Bacon, diced Turn Traeger to smoke then Increase the temperature to 250 F and preheat. In a saucepan, bring to a boil brown sugar, butter and syrup. Boil at a slow boil for 5 minutes without stirring. Remove from heat and add baking soda, salt, vanilla and bacon to the mixture. Stir until well combined. Pour over popcorn and toss.
