Biscuits and Healthy Sausage Gravy

A drizzly day calls for biscuits and healthier version of sausage gravy. Half the biscuit and add extra spinach for an even healthier take.

Biscuits, halved

Eggs, scrambled

Tomatoes

Avocado

Sautéed spinach (sauté EVOO, garlic, S&P. Pull off the heat as soon as it starts to wilt)

Sausage gravy

1 package Applegate Chicken Sausage

2 TB flour

2%milk, as needed for thickness

Ground Pepper

Garlic salt

Dash of nutmeg

Crumble sausage (break into little pieces don’t cut) and sauté until golden. Sprinkle flour over sausage until cooked through. Add one cup of milk until combined and then 1-2 more. Let thicken for 10 minutes. Add more milk if needed. Add salt, pepper, and nutmeg.

ETC. Under cook the eggs just a bit so they don’t get rubbery. Take away the biscuit and this would be a great breakfast scramble.
