Citrus Chimichurri

My favorite citrus chimichurri that goes with all types of meat. My favorite is pork tenderloin. I can eat this stuff by the spoonful! Combine all ingredients: 1 cup olive oil 3/4 cup plus 2 tablespoons fresh lime juice 3/4 cup orange juice 1/2 cup chopped fresh cilantro 8 garlic cloves, minced 1 tablespoon grated orange peel 1 tablespoon dried oregano 2 1/2 teaspoons ground cumin 1 1/2 teaspoons salt 1 1/2 teaspoons ground black pepper I Use about 1/3 of the sauce to marinate my meat (chicken, pork, steak) and the leftover I spoon over the meat once it’s grilled. This may be the perfect thing for Christmas Eve!

Smoked Brisket

Our Traeger was working overtime the last couple of days. It really the best thing that has happened to our kitchen this past year! The most unbelievable tender Brisket recipe TRAEGER recipe- cover brisket in a whole bottle of Famous Daves Rib Rub. Place brisket right on the grill grate for about 3 hours on 180 degrees. Take the brisket off and put in roasting pan covered with foil and put back on the grill at 225 for another 5 hours.

Flank Steak with Mango and Pineapple Salsa

Taking dinner to a dear friend who has spent the last two weeks at the hospital with her baby. Hoping this flank steak fills up her hungry family! In a large ziplock bag add: Flank Steak 1/2 bottle of sesame soyaki sauce 3-4 gloves of chopped garlic 4 green onions, chopped Marinate the meat for at least 2-3 hours. Pull it out of the fridge so it gets to room temperature before you put it on the grill or Traeger. Grill on high (425) with the Traeger for about 6 minutes on one side and 2-3 on the other for medium rare. The best part about this recipe is the salsa that is homemade by.. Trader Joes and tastes amazing on steak. Have the salsa at room temperature and mix with a little red pepper for some kick and green onions to garnish the top. THAT WAS TOO EASY!

Creamed Spinach Burger

This is a healthier take on CREAMED SPINACH but you’re welcome to do a full fat version too. In 2 Tb EVOO sauté 2-3 chopped garlic cloves and 1/2 diced sweet yellow onion. After 5-7 minutes add 2 containers frozen spinach (thawed and drained). Cook through. Add a 1/3 C low fat cream cheese, dash of fresh nutmeg, and a healthy shake of S&P. Once cooked through add 3/4 (about..) 2% milk and simmer until liquid is cooked through. Add 1/2 C grated parmesan at the very end of cooking. Add more S&P if needed. BURGER- I used 96% extra lean ground beef. To raw meat I added 1/4 C Worcestershire sauce and S&p. Cook in a skillet until medium rare (it will keep cooking). Add 1/2-1 C of beef broth to the pan the burgers were cooked in and deglaze and reduce drippings and broth. TOAST good white bread and lightly butter. Add burger, creamed spinach and top with Trader Joes Fried Onion pieces.

Baked Fried Chicken

This “Fried Chicken” is finger lickin’ good and not bad for your waist line! My husband and I ate boneless skinless chicken breasts and the kids love the drumsticks and thighs or “chicken bones” as my 7 year old likes to call them. Marinate chicken (your favorite kind) in buttermilk and a dash of hot sauce for an hour. I add 2 eggs directly to the buttermilk mixture and mix it around to coat the chicken. Meanwhile in a large plastic bag add 1/2 corn flakes and 1/2 potato chips (I used reduced fat kettle chips). Crush until you achieve your desired consistency. Add seasoned salt and pepper to dry mix but remember your potato chips are salty too. Dredge chicken in cornflake mixture until coated on both sides. Lay on greased cookie sheet. Add a dash of cayenne on top of the chicken for those who like it hot. Drizzle a little EVOO on top of each piece of chicken which will help crisp the top. Bake at 400 degrees for ? Lean and Mean Meatballs

This picture does not do these homemade meatballs justice. I love big, moist, juicy meatballs with a delicious vegetable sauce and just a little whole wheat angel hair pasta. My secret to moist meatballs is soaking a piece or two of bread in milk until it is all absorbed. Don’t skip this step! Combine- Extra lean ground beef 93% lean 1-2 lbs 1-2 eggs 2 slices wheat bread soaked in 3/4 C milk until soggy- tear apart into tiny pieces Italian herbs (fresh parsley,dry basil, dry oregano) 3/4 C Parmesan cheese Minced garlic 1/2 Grated onion (use a zester and grate onion juice into mixture) S&P Red pepper flakes Mold meatballs into 1 1/2 inch or bigger balls. Sear on all sides in a sauté pan with EVOO. Sauté eggplant and mushrooms in some EVOO (or any veggies you have). There are so many great sauces out there I use Rao’s or Emeril’s tomato sauce. Meatloaf Marinara with Zoodles

Filming a fun segment on @studio5ksl today! Meatloaf cupcakes (previous post) and turning the leftovers into two different meals. My family all agreed we liked this “meatloaf marinara” sauce as much as the cupcakes. Crumble up leftover meatloaf muffins and put in Arrabbiata sauce. Top with shaved Parmesan and red pepper flakes. Serve over *zoodles or pasta! * I sauté my zoodles in a little Grape Seed Oil and S&P. Don’t overlook them or they’ll be soggy and watery. You want them cooked al dente.

Steak with Chimichurri

Another great dish to serve a crowd. The fresh herbs with this steak was a huge crowd pleaser! In a blender combine: 1C fresh flat leaf parsley 1C fresh cilantro 1/2 onion or whole shallot 6 cloves garlic 1Tb (or more) red pepper flakes 2 TB dried oregano 1/4 C lemon juice/lime juice/Red wine vinegar, or any type of acidic liquid Lemon or lime zest S&P Blend until just combined. Add 1 1/4 C EVOO at the very end and spin once more until combined. Marinate flanks steak with a portion of the chimichurri sauce for 1-2 hours before grilling or Traegering. Once grilled, let rest for 10 minutes and thinly slice. Top with spoonfuls of chimichurri sauce. *I always have my steak at room temperature before throwing it on the grill or Traeger. It cooks more evenly and you can keep a nice pink inside without overcooking the outside.
