Aunt Phyllis’ French Mints

I’m always looking for good dessert recipes (since we know I’m a terrible baker) especially for a crowd. My darling friend @eloiseandme passed along a family favorite that I’m making today for the first time. Can’t wait @eloiseandme Thank you! Aunt Phyllis’ French Mints 8 eggs 2 c butter 4 c powder sugar 4 t vanilla 2 t peppermint extract 8 square melted baking chocolate (square is 1oz) 4 c chopped pecans Beat butter until fluffy. Add powdered sugar. Beat for 15 minutes (this is the secret). Add melted chocolate after it has cooled. Beat 5 more minutes. Add eggs, one at a time. Beat well after each. Add vanilla and peppermint. Cover bottom of cupcake liners with nuts. Spoon mixture on top and sprinkle with nuts on top. Store in freezer. I cover them after they have frozen a little. I do some without nuts too. Makes about 55 servings.

Peach Chia Seed Smoothie

Breakfast, dessert, or afternoon snack? All of the above and it’s beautiful, delicious, and so easy! CHIA PUDDING 1/4 Chia seeds 1 C of your favorite milk (almond or coconut) 1 C of your favorite yogurt (Chobani plain 0%) 1 tsp Vanilla extract Dash of Maple syrup Dash of Salt Cover and refrigerate mixture for a couple of hours. PEACH SMOOTHIE- blend 1 banana 2 peaches Frozen berries Handful of spinach Almond milk Ice Layer chia pudding, smoothie, and chopped peaches!

Popsicles aren’t just for kids! And this one is low cal for all those tired and busy Moms out there. Frozen fruit Bai5 Juice Sparkling water Mint Fill Popsicle mold with your favorite frozen fruit and matching Bai5 Juice. I added mangos and mango juice. Blueberries, pomegranates, or any other combos would work. Add sparkling water and a sprig of mint. Sit back, relax, and invite a friend over!

Acai Bowls

Hosting a morning meeting, and wanted to keep it healthy and fresh. I hate sitting down to a meeting and feeding my face with doughnuts and muffins (because if its in front of me, I will!) Sambazon Superfruit packs are the easiest way to make Acai bowls at home. I’ve only found them at Whole Foods in the freezer section. Blend Sambazon pack with – 1/2 C Almond Coconut milk Handful of berries 1/2 banana Spinach Blend to desired consistency (It should be very thick, similar to ice cream.) Add your favorite toppings! Watermelon & Cucumber Granita

3 Cinco de Mayo recipes for you today all with Watermelon and Cucumber! Pour Trader Joes Watermelon Cucumber juice (obsessed) into a 9 by 13 casserole dish. Add fresh lime juice and finely chopped mint. Freeze for at least 6 hours or until frozen through. Use the tines of a fork to scrape the granita into chilled bowls and serve. Add a dash of cayenne if you like some spice.
