Coconut Cashew Chicken

Because I do plan on making dinner sometime this week (and aren’t these the most helpful for you?). This Coconut Cashew Chicken was so good and so easy! My kids said its their favorite chicken. Chicken breasts Coconut covered Cashews (Costco or Trader Joes) That’s it! I ground the nuts in my blender and covered the chicken in them. (I didn’t use any egg or flour but I’m sure you could). We grilled them on our #traeger but your oven or BBQ would be fine too. Trader Joes frozen Brown rice and frozen veggies are my go-to’s lately for a quick and healthy dinner.

Turkey sandwich with Sriracha and Roasted Garlic BBQ sauce

I have the answer to all leftover turkey!! Sriracha & Roasted Garlic BBQ Sauce from Trader Joes. I had this for lunch AND dinner yesterday. Here’s what you do: Baguette, sliced Top sliced turkey with Swiss cheese and broil until melted Add avocado, tomato, and turkey/cheese to the sandwich. Heat Sriracha sauce until hot and dip away! For low carb (it’s even better then the sandwich): mix dressing of lemon juice, EVOO, garlic, and S&P. Use romaine lettuce and add parmesan and slivered almonds. Top salad with broiled turkey and cheese and pour Sriracha sauce on top!

Spicy grilled shrimp

My sister made us the most delicious salad today at her new home. Her grilled shrimp were amazing! Skewer raw shrimp Sprinkle with Tajin Grill for 3 minutes on each side and baste with- Butter Tajin Garlic powder Cayenne pepper Black pepper Brush remaining butter sauce on shrimp after grilling. ETC. My favorite part of the salad besides the grilled veggies and feta was the brown rice she added right on the salad. So good!

Chicken Sliders on Sweet Potato Waffle Fries

Football is right around the corner!! Try these delicious and easy Chicken Burger Sliders on Sweet Potato Waffle Fries! Buy Sweet potato waffle fries and bake according to package directions. Chicken burger- 1 1/12 lb Ground chicken 1/2 onion, grated 1/4 C Parsley, chopped finely 2 tsp Garlic salt Ground Pepper Combine chicken mixture until combined. Form into small sliders and grill or Traeger for just a couple of minutes on each side. Layer chicken burger, dill pickle, tomato, and avocado on each waffle fry and top with one more. Serve with Ketchup and mustard.

Pulled Pork and Tri Tip

PREPARATION Pork shoulder Roast: Generously season all sides of the pork roast. Put the roast on the grill grate, fat-side up, and smoke for 3 hours, spraying with apple juice every hour after the first hour. Transfer to a disposable aluminum foil pan large enough to hold the roast. Increase the temperature to 250 degrees F, and roast for 6 to 8 additional hours, or until an instant-read meat thermometer inserted in the thickest part, but not touching bone, registers 190 degrees F. If the pork starts to brown too much, cover it loosely with aluminum foil. Carefully transfer the pork roast to a cutting board and let it rest for 20 minutes. Pour the juices from the bottom of the pan into a gravy separator. With your hands pull the pork into pieces. Season with additional rub and moisten with the reserved pork juice. Filet Mignon Piadine

Store-bought pizza dough, I think Whole Foods has the best one. Slather with EVOO and put directly on the grill or Traeger. Romaine and Red leaf lettuce Traeger grilled green onions and asparagus cut up TJ frozen corn heated through tomatoes Grated Parmesan Grilled Filet – coat with EVOO and your favorite rub. I like seasoned salt and pepper. Let sit to room temperature then grill until medium rare. Let sit for 10 minutes and slice thinly. / I used my red wine vinaigrette dressing that’s in a previous post.
