Jamaican Street Corn

Jamaican Street Corn! 6 ears of fresh corn on the cob, leave them whole or cut in half 2 c. coconut flakes, toasted 1/2 c. mayo 1/2 tsp. grated ginger 1/4 tsp. cayenne pepper 1/2 tsp. ground cinnamon 2 1/2 Tbsp. curry powder Lime wedges Mix all the ingredients for the mayo together and set aside. Grill the corn until caramelized. Once off the grill, brush the ears with a coat of the spiced mayo and then roll the ears in the coconut.

Grilled Corn & Black Bean Salad

Clean eating at its yummiest! I am obsessed with this salad. It’s citrusy, a tad spicy, and has a great blend of textures. Double the recipe and use it the next day in numerous ways (over eggs, with brown rice, over a chicken breast, Nacho topping, the possibilities are endless!). 1 can Black beans, drained 3-4 corn on the cobs, grilled 1 bunch asparagus, grilled Green onion, grilled then thinly sliced Radishes, thinly sliced Avocado, sliced Feta or Cojita cheese   Chili-lime vinaigrette 1 part freshly squeezed lime juice 1 part EVOO or Grape Seed Oil Dash or two of chili powder Handful of cilantro, chopped s&p to taste Heat beans and add chopped asparagus, corn, radishes, green onion, and feta. Top with avocado slices and drizzle dressing on top.

Corn Cake

This meal has my name written all over it. I was going to share my party drink recipes but that will have to wait until tomorrow. Corn cake: 1 C corn meal 1/2 C flour 3/4 tsp baking soda 1 tsp salt 1 tsp pepper 1 tsp sugar 1 1/2 – 2 C milk 1 egg, beaten 1/4 C honey Green onion, sliced 1 1/2 C Frozen corn, thawed 1 C shredded cheese Jalapeño, diced Mix well and cook like a pancake. Top with leftover pulled pork or any meat (beef or chicken would be great). Top with fried or soft boiled egg. *For an amazing sweet corn cake, mix 2 parts mascarpone cheese to 1 part honey and smear (a lot) on corn cakes. OH MY GOSH!!

Chicken and Corn lettuce wraps

Light and refreshing lettuce wraps for lunch or dinner. Who wants to be slaving behind a hot stove? Butter lettuce cups Cojita cream- 1 part Cojita cheese to 2 parts sour cream Grilled chicken or rotisserie chicken, cut up (I put the TJ grilled chicken strips on the BBQ for 2 min) Grilled corn Radishes, thinly sliced Cilantro, roughly chopped Squeeze of lime juice Assemble and EAT! ETC. Use steak, shrimp or fish instead of chicken Use feta cream (from earlier post) instead of Cojita Add avocado and tomatoes Put in a tortilla or on a tostada Assemble on a Tortilla chip without the chicken for an appetizer.

Shrimp Tostada Stack

I may not be cooking much this week, but I wanted to share a favorite summer dinner with you. Stack- Tostada shell or charred tortilla Guacamole Grilled corn Black beans Cole Slaw (red peppers, jalapeño, cilantro, with 1 part lime juice to 1 part EVOO, dash of Sriracha and S&P) Cilantro Grilled shrimp (cover shrimp in Sweet Chili sauce and grill) or Seared Ahi Tuna chunks Lime juice and zest Cojita Cheese Top with Trader Joes Partially Popped Popcorn ETC. No need to run to the store, stack anything you have on hand! Leftover chicken or fish would be great too. Use all ingredients the next day plus lettuce for a salad. Use TJ frozen corn. Add all ingredients (except slaw) to guacamole and serve with chips. Make extra shrimp or tuna and slaw and serve over brown rice for dinner the next night.
