Apple Oatmeal Snack

This late-night snack blows my three bowls of cereal out of the water. Now it’s an after school, breakfast, and nothing in the fridge favorite. Apple, middle cored out Oatmeal, cooked Brown sugar Cinnamon Pecans Kosher salt Core out middle of the apple and cut up to add to oatmeal. Cook oatmeal and add cinnamon, apple chunks, pecans, dash of salt, and cinnamon. Bake at 350 for 30 minutes. Top with additional brown sugar (and a blob of butter if you’re living dangerously

Baked Granola Apples

Happy first day of fall! My house smells so good right now! 🍁 BAKED APPLES Apple, cored Granola Brown sugar Cinnamon Nutmeg Butter Orange, zested Maple Syrup Dash of salt Core Apple and fill with granola, cinnamon, nutmeg, a little brown sugar and top with a little butter and orange zest. Fill dish with water and cook filled apples for 20 minutes covered with aluminum and 25-30 minutes uncovered at 375. Once cooked, drizzle maple syrup, orange zest and a dash of salt. Serve with nonfat Greek yogurt, ice cream, or on its own.

Banana and Granola Pancakes

Do you ever put granola in your pancakes? Or do you ever put coconut ice cream in your maple syrup? You should! Pour prepared pancake mix on griddle. Add banana slices and granola. Flip. The bananas will caramelize and it’ll toast the granola. Top with more granola and pineapple chunks. Melt ice cream, mix with maple syrup and try not to eat 5!

I’m obsessed with Aloha Granola when I’m in Hawaii. Unfortunately they don’t sell it on Amazon, so you can make your own at home! Aloha Granola- Your favorite granola (store bought is fine) Unsweetened coconut flakes Sunflower seeds Sesame Seeds Macadamia Nuts, chopped Tropical dried fruit, chopped (Dried pineapple, mango, or papaya) Dash of honey. Apple Maple Yogurt Parfaits

Pick your favorite- (Amounts will vary depending on number of serving and desired sweetness) Greek Yogurt Apples Granola Cinnamon Fresh nutmeg Brown Sugar Maple Syrup Trader Joes Pumpkin Spiced pumpkin seeds Mix cinnamon and fresh nutmeg in with your favorite kind of plain or vanilla greek yogurt. Set aside Chop apples into bite size pieces and sauté with brown sugar and Maple syrup. Let cool Layer cinnamon yogurt, apples, and granola until glass is full. Top with Trader Joes Pumpkin seeds and a drizzle of maple syrup. Enjoy!

Granola

You’ll want to eat this by the handful (and I did as I was mixing it!) This granola is more of an art then science. Add your favorite things or omit anything you don’t like. It last forever in a sealed container and is so addictive you’ll wish you made more. My husband and kids love it on yogurt or just to snack on. Rough recipe – I literally threw handfuls of my favorite things in. Combine: 11 C Quick cooking old-fashioned oats 3 C sliced almonds 2 C Flaxseed 1 C sunflower seeds 1 C pecan pieces or any other kind of nuts 2 C coconut flakes Dash of cinnamon Dash of salt In a sauce pan heat through 1-1 1/2 C oil 1 C honey 1/2-1 C brown sugar 1 -2 Tb vanilla extract The oil, honey, brown sugar mixture vary on what I making the granola for. For guests or special occasions I add more, for at home use I do a lot less so it’s healthier.
