Summer 2015

Summer 2015- Green hair, same clothes, not a lot of brushing hair or violin. Sun burns and bathing suits all day even to bed. Driveway full of strollers and bikes and crackers and garbage. Hose permanently turned on and water balloons in every nook and crevice. Late nights and late mornings with too many Jesse episodes. Sugar for breakfast lunch and dinner with a “treat” in-between. Bike rides and crashes, close calls and scraped up knees and elbows. Yelling, fighting, sharing beds and laughs. Leaving every door open, inviting every fly in and leaving trails of food and wrappers wherever they go. Sunday hikes with lots of complaining, and going all day until they crawled into bed. 3 year olds keeping up with 9 year olds and running back and forth across the neighborhood 12 hours straight. Everyday. I’d say it was perfect!

Pineapple and Mango Spritzers

Playing bartender with 3 out of the 4 of my girls. We’re non drinkers but still love fancy glasses and fun drinks! With so much fresh fruit in Costa Rica we came up with some delicious concoctions. Sparkling water Lime juice Chunks of Mango Chunks of Pineapple Mint The key to good flavor is adding fruit, lime, mint, and ice first and “muddling it”. We all drink these fun drinks in the summer but I say get out your fancy glasses and bring a little summer today!

Mint, Cucumber, and Lime Spritzer

Mint leaves Cucumber, sliced Fresh squeezed lime juice Next you can add what you like: Club soda Sparkling water Fresca 1/2 Can frozen limeade concentrate Let this sit for an hour or two before serving. Personally I like sparkling water or club soda but for parties I’ll add Fresca and/or limeade concentrate to sweeten it up. Before serving add a lot of ice and enjoy!

Watermelon & Cucumber Guacamole

And finally, my third Cinco de Mayo recipe with watermelon and cucumber. (My personal favorite!) Avocado or premade guacamole Watermelon, chopped Cucumber, chopped Feta cheese Lime juice and zest Chili powder Kosher salt I Love my local grocery store’s deli-made guacamole so I started with that. Add watermelon and cucumber and mix. Top with feta cheese, lime zest, lime juice, chili powder, and salt. TIP *I don’t often post all the different recipes I try with the same ingredients but I do this a lot. If you have a lot of cucumber and watermelon for instance try totally different ways of using it. Don’t let extras go to waste or feel like you have to have the same leftovers 3 nights in a row. Make extra guacamole then put it over grilled chicken and brown rice the next night. I find it challenging and fun to come up with totally different uses for ingredients I have around the house.
