Smoked Brisket

Our Traeger was working overtime the last couple of days. It really the best thing that has happened to our kitchen this past year! The most unbelievable tender Brisket recipe TRAEGER recipe- cover brisket in a whole bottle of Famous Daves Rib Rub. Place brisket right on the grill grate for about 3 hours on 180 degrees. Take the brisket off and put in roasting pan covered with foil and put back on the grill at 225 for another 5 hours.

Hash Brown waffles and Soft Boiled Eggs

Last nights leftovers were better then the real thing. Soft boiled eggs a favorite Hash Brown waffles- store brought shredded hash browns put on a greased waffle iron (so easy)! Carne Asada off the Traeger Leftover salad fixings – Trader Joes frozen corn, TJ’s frozen onions and peppers black eyed peas edamame (I added this to lettuce with other things the night before but add chicken and you have a full meal) Grilled asparagus on a HIMALAYAN SALT BLOCK (more info on that later)

Bacon wrapped Cream Cheese Peppers

One of my absolute favorite game day Traeger appetizers! 40 jalapeno peppers 1 8-ounce package cream cheese, at room temperature 1 cup grated Cheddar, pepper Jack cheese, or mozzarella 1-1/2 teaspoons Traeger Pork and Poultry Rub (or your favorite spice blend) 2 tablespoons sour cream 20 slices smoked bacon, cut in half Cut the stem ends off of Jalapeño and scrape the seeds and ribs out of each pepper (USE GLOVES). In a small bowl, combine the cream cheese, grated cheese, Traeger Pork and Poultry Rub, and the sour cream. Transfer the mixture to a resealable plastic bag and trim 1/2-inch off one of the lower corners with a scissors. Squeeze the cream cheese mixture into each pepper. Wrap the outside of each with a piece of bacon, securing with 1 or 2 toothpicks. Arrange the peppers on a foil-lined baking sheet. Smoke the peppers for 1 hour. Increase the heat to 350 and continue to cook for 20 to 30 minutes, or until the bacon begins to render its fat and crisp. #superbowl #superbowlparty #appetizer #food #yum #snack #gameday…

Tandoori Shrimp

| INGREDIENTS | 2 lbs jumbo shrimp, peeled [leave tails on] and deveined 1/2 cup freshly squeezed lime or lemon juice 1 1/2 teaspoons Cajun Rub 1 cup plain [greek] yogurt 1/4 cup heavy cream, half and half, or milk 1/2 of a small onion, coarsely chopped 3 cloves garlic coarsely chopped 1 1″ piece of fresh ginger peeled and coarsely chopped 2 teaspoons chili powder 1 1/2 teaspoons ground cumin 1 teaspoon ground coriander 1/2 teaspoon ground turmeric a few drops of red and orange food coloring [optional] 4 tablespoons butter melted thinly sliced red onions lime wedges sprigs of cilantro for serving | DIRECTIONS | Put the shrimp in a large resealable plastic bag. Combine the lime juice and Cajun Rub. Pour over the shrimp and refrigerate for 15 minutes. In the meantime, combine the yogurt, cream, onion, garlic, ginger, chili powder, cumin, coriander, and turmeric in an blender jar and process until the mixture is fairly smooth. Creme Brûlée Doughnut

You guys! This should be called a Creme Brûlée doughnut! It’s crispy and sugary on the outside and soft and chewy on the inside. Slice your favorite doughnut in half. Traeger or grill for 2-3 minutes on each side. Fill with homemade cinnamon whipped cream and strawberries! Cinnamon whipped cream- 1 quart of whipping cream 1 1/2 tsp cinnamon 2 tsp vanilla extract 1/4 C powdered sugar Blend in blender. (You don’t want the whipped cream too sweet because of the doughnut.)

Corn Cake

This meal has my name written all over it. I was going to share my party drink recipes but that will have to wait until tomorrow. Corn cake: 1 C corn meal 1/2 C flour 3/4 tsp baking soda 1 tsp salt 1 tsp pepper 1 tsp sugar 1 1/2 – 2 C milk 1 egg, beaten 1/4 C honey Green onion, sliced 1 1/2 C Frozen corn, thawed 1 C shredded cheese Jalapeño, diced Mix well and cook like a pancake. Top with leftover pulled pork or any meat (beef or chicken would be great). Top with fried or soft boiled egg. *For an amazing sweet corn cake, mix 2 parts mascarpone cheese to 1 part honey and smear (a lot) on corn cakes. OH MY GOSH!!
