Peach & Blackberry Galette

Ushering in summer with this fast and delicious Peach and Blackberry Galette. This is so easy you could pull it together tonight! Store bought pie crust (of course I love TJ pie crust) I don’t roll it out at all. I lay it out and add fruit. Mix 3 cups of sliced peaches, nectarines, berries or your favorite fruit add… 1/2 C Sugar 1 lemon zested 1 lemon juiced 3 TB cornstarch Mix and let sit for a couple of hours (or not). Add fruit to center of the pie crust leaving a 1 inch border. Fold crust around fruit and brush with egg wash. Bake or Traeger (AMAZING) on 400 degrees for 15-20 minutes. I slightly under cook mine so it’s soft and not crunchy. Happy Memorial Day!!

Grilled Doughnuts with Balsamic and Strawberry reduction

Happy National Doughnut Day! These babies were the dessert at my party and everyone ate them up! Grill or Broil Glazed Doughnuts Fill the hole with custard (I bought some at a local bakery) or mascarpone cheese is good too. Drizzle on warm balsamic strawberry sauce and serve. Sauce- On a stovetop combine: 1 part Balsamic glaze 1 part brown sugar Lemon zest Dash of lemon juice Once sauce is combined, add strawberries and warm through.

Peach and Plum Crumble

This is my kind of baking! No exact measurements and you can’t screw it up. This served a huge crowd so I’ll give you a general idea of this recipe halved (general as in I’m guessing because I never measured it initially. 6 Peaches, sliced (I keep the skin on) 8 Plums, sliced 3/4 C sugar Juice and zest of 1-2 lemons 1-2 TB cornstarch Dash of salt Sprinkle sugar, lemon juice, lemon zest, a dash of salt and corn starch on fruit. Mix, taste, and adjust accordingly. For topping mix- 3/4 C granola 3/4 C old fashioned oatmeal 3/4 C brown sugar 3/4 C flour Handful of slivered almonds 1 tsp cinnamon 1 tsp vanilla Dash of salt Work in 1/2 C of cold butter until all combined. (you may need a little more butter). Place crumble topping on top of fruit. I baked mine on the Traeger for 45 minutes on 350. I added Pioneer Woman’s Maple Cream sauce on top. It’s amazing!! Mini Pretzel Snickers

I totally fall for all of the National Food Days! So, for national junk food day,  here you go! Mini pretzels Bite size snickers Peanut Butter Semi-Sweet Chocolate Chips Stack a mini snicker on one pretzel and put in a 300 degree oven to melt a little (not too much). Add a little peanut butter on second pretzel and top snicker with it. Let cool in fridge and dip half of pretzel in melted semi-sweet chocolate. Refrigerate until serving. Stick to one or two at the most and you’re golden. Give the rest to a neighbor or friend who needs some cheering up!
