Churros

Not the healthiest breakfast we’ve ever had.  I was experimenting for a get together tomorrow and these crunchy on the outside, chewy on the inside Churros did not disappoint 1 cup water 1/2 cup butter or margarine 1/4 teaspoon salt 1 cup all-purpose flour 3 eggs, beaten Vegetable oil, for frying 1/4 cup sugar 1/4 teaspoon ground cinnamon To make the churro dough: Combine 1 cup of water with the butter or margarine and the salt in a saucepan and bring to a boil over high heat. Using a wooden spoon, stir in flour. Reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Remove the dough from the heat and, while stirring constantly, gradually beat the eggs into the dough. Heat about 2 inches of oil in a heavy, high-sided pot over medium-high heat until the oil reaches 360 degrees F. ( I just tested a little piece since I don’t have a thermometer). Easy Beignets

So delicious, so naughty, and way too easy!! These beignets are the perfect semi-homemade dessert and perfect for a special occasion! I made these for a fun New Orleans collaboration with @shabbyapple and love working with them!! 1 package flaky biscuits 1 C butter flavor shortening, for frying 8 tablespoons butter 1 C dark brown sugar, packed 3 Tb milk 1 tsp vanilla 1⁄4 C toasted walnuts, chopped Melt butter in a medium saucepan over medium heat. Add sugar and whisk until sugar melts and mixture begins to boil, about 5 minutes. Stir in milk, vanilla, and pecans until smooth. Set aside. Separate biscuits and cut into forths. In heavy bottomed skillet, melt the shortening over medium heat. Fry biscuit quarters in batches until golden on each side (this will take 30 seconds or so so watch and flip quickly. Dust generously with powdered sugar and serve with sauce. You can also reheat before serving if not eating right away.

Watermelon & Cucumber Granita

3 Cinco de Mayo recipes for you today all with Watermelon and Cucumber! Pour Trader Joes Watermelon Cucumber juice (obsessed) into a 9 by 13 casserole dish. Add fresh lime juice and finely chopped mint. Freeze for at least 6 hours or until frozen through. Use the tines of a fork to scrape the granita into chilled bowls and serve. Add a dash of cayenne if you like some spice.

Grilled Pineapple Sundae

Just in case you need one more use for your pineapple! Cut rings of fresh pineapple and brush with honey and butter mixture (1 part butter 1 part honey) Grill pineapple. I did mine on the Traeger which was delish but any grill should work. Top grilled pineapple with vanilla ice cream and Fleur de Sel Caramel sauce (Trader Joes). HAPPY MOTHERS DAY!!

Chocolate and Butterscotch Baklava

1 package frozen phyllo dough, thawed 3 cubes butter, melted 16 oz nuts (almonds and pistachios) 1 package semisweet chocolate chips 1 package butterscotch chips 2 cups shredded coconut   SYRUP: 1 cup sugar 1 cup water 1 cup honey   Butter your baking pan. Unroll one package of phyllo dough; cut stack into a rectangle that fits your pan. Line bottom of prepared pan with two sheets of phyllo dough (sheets will overlap slightly). Brush with butter. Repeat layers 8 times. (Keep dough covered with a damp towel until ready to use to prevent it from drying out.) It does not have to be perfect! In a blender combine the nuts and chocolate/butterscotch chips. Sprinkle 2 cups over top layer of phyllo. Top with four layers phyllo dough, buttering each layer. Top with 2 or more cups nut mixture. Top with four layers phyllo dough, buttering each layer; top with remaining nut mixture. Top with the remaining phyllo dough, brushing each layer with butter. Drizzle any remaining butter over top. Creme Brûlée Doughnut

You guys! This should be called a Creme Brûlée doughnut! It’s crispy and sugary on the outside and soft and chewy on the inside. Slice your favorite doughnut in half. Traeger or grill for 2-3 minutes on each side. Fill with homemade cinnamon whipped cream and strawberries! Cinnamon whipped cream- 1 quart of whipping cream 1 1/2 tsp cinnamon 2 tsp vanilla extract 1/4 C powdered sugar Blend in blender. (You don’t want the whipped cream too sweet because of the doughnut.)
