Banana Egg Nog Bread Pudding

I had a meeting at my house last night and dreamed up this banana egg nog bread pudding to serve that was super easy and amazingly delicious! You can put this in a casserole dish, but I liked serving individual cups baked in muffin tins. 4 large eggs 1 C whole milk 1C egg nog ¼ cup brown sugar 2 teaspoons vanilla extract 1 tsp kosher salt 6 cups cubed challah bread (½ loaf) 5 ripe bananas, peeled and cut into coins 3 Tb white sugar Mix first 6 ingredients together in a bowl. Add bread, mix together, and put in refrigerator until bread has soaked in all of the liquid (a couple of hours). Spray muffin tins very well. Add 3 sliced bananas and 1 scoop of bread mixture then repeat ending with bread mixture. (My muffin tins were very full and close to overflowing). Valentine Doughnut Holes

These Valentine Doughnut holes are my kids favorite activity this time of year. Use store bought powdered or glazed doughnut holes (glazed works better). Thin out a tub of store bought frosting with a Tablespoon or two of milk. You want it thinner but not too runny. Put sprinkles in different bowls. Dip each doughnut in frosting and let your kids roll them in their favorite sprinkles! Zurchers or party stores have the best Valentine sprinkles right now.

Grilled Dessert Pizza

Bribing my kids to NOT help in the kitchen. Grilled pizza dough -Pillsbury dough would work too- with butter instead of EVOO (stretch room temperature dough into desired shape and brush both sides with butter. Grill on high for 2-3 minutes then flip sides for 1 minute). You can also bake at 400 degrees for 8 minutes (one side). Layer with: Bananas Cinnamon sugar mixture Chocolate chips Powdered sugar Broil for 1 minute

National Pie Day

National Pie day at our house! I’m in charge of dessert for a dinner this weekend. I started with the idea of Banana Cream Cheese Pie then decided I’d make a bunch of different mini pies with all different kinds of fruit. My base is cream cheese pie but you can add anything you want! My favorite is layered bananas coconut Dulce de Leche. Crust- Keebler Graham cracker crumbs (follow package directions) Mold into ramekins 1 (8 ounce) package cream cheese, at room temperature 1 (14 ounce) can sweetened condensed milk 1/2 cup fresh lemon juice 1 teaspoon vanilla extract Using a hand held electric mixer, cream the cream cheese until light and fluffy, about 3 to 5 minutes. Slowly add the milk mixing on low speed until well combined. Stir in the lemon juice and vanilla. Layer and top your mini pies with your favorite fruits. Refrigerate for 2 hours.
