Lobster Roll and Homemade Fries

Cooking for people I love is one of my greatest loves! Steam, grill, or broil lobster. Add crab or langostino to add volume so you don’t have to use all lobster. Mix with mayonnaise, a dash of Dijon mustard, lemon juice, chopped chives, green onion, and s&p. Chill in fridge for a couple of hours before eating. Butter roll and put on a dash of seasoned salt then broil. Homemade baked French fries- slice russet potato and soak in water. Dry then drizzle on Evoo (more then you think) and seasoned salt (more then you think). Bake at 450-500 then broil to get crispness. Keep adding seasoned or kosher salt. Potatoes need more salt then you think.

Citrus Butter Scallops

8 tablespoons salted butter, melted 1 clove garlic, finely minced Zest from 1/2 small orange Juice from 1/2 small orange 1/4 teaspoon Worcestershire sauce 1-1/2 teaspoons chopped fresh parsley or tarragon 1-1/2 to 2 pounds large dry-packed scallops Freshly ground black pepper Salt to taste Put a cooling rack or wire grid on a rimmed baking sheet. Season the scallops with salt and pepper and arrange them on the rack on baking sheet. Put the baking sheet with the scallops on the grill grate and smoke for 20 minutes. Remove the baking sheet and set aside. In the meantime, increase the temperature of the Traeger to 400 degrees F. Preheat for 15 minutes. Return the baking sheet with the scallops to the grill grate and roast the scallops until just opaque and tender, 10 to 15 minutes. The time will depend on how thick the scallops are. Do not overcook. In the meantime, melt the butter in a small saucepan over medium-low heat. Add the garlic, orange zest, orange juice, Worcestershire sauce, and parsley. Simmer for 5 minutes. Maple Bacon Wrapped Scallops

Maple Bacon wrapped Scallops for 200 was not a problem at my annual Christmas Soiree last night. Our Traeger Chef nailed it with these beauties! Ingredients: 12 Jumbo Sea Scallops 1/2 Cup Salted Butter 1/2 tsp Crushed Garlic 12 Thick Cut Maple Bacon Slices Fresh Ground Pepper Cayenne Pepper Smoked Paprika Preparation: Take scallops out, pat dry with paper towel and place in a large mixing bowel. In medium sauce pan melt the salted butter and bring to a boil then add crushed garlic. Bring sauce to a simmer and stir continuously for 1-2 minutes. Remove from heat and let cool. While sauce is cooling, lay bacon strips out on a cookie sheet and generously grind black pepper over the bacon. Once the sauce has cooled pour over the scallops in the mixing bowl and lightly stir. (be careful not to break the scallops) Remove scallops one at a time wrapping the bacon around the edge of the scallop, securing it with a tooth pick. Tuna Salad with slivered almonds

Last nights dinner turned into lunch all week. I don’t make tuna very often, but when I do I love it! You can make this your own with whatever ingredients you have on hand. Here is one of my favorite combinations: Albacore in water Light mayo Spicy mustard Relish Diced purple onion Diced Clauson pickles Diced cucumbers Diced celery Lemon juice Lemon zest Kosher salt &pepper (I add Sriracha sometimes which adds a nice kick) Serve with bib lettuce instead of bread for lower carb. And I love avocado and toasted almonds on top.

Smoked Ceviche

Back from a fun filled snowboarding trip and prepping for a dinner party for 12 tonight. This Traeger smoked ceviche has the perfect combination of smoke, citrus, and spice! INGREDIENTS 1 lb. Sea Scallops 1 lb. Shrimp Juice from: 1 lime, 1 lemon, and 1 orange Zest from 1 lime 1 tsp. Garlic Powder 1 tsp. Onion Powder 2 tsp. Salt ½ tsp Pepper 1 Avocado, diced ½ Red Onion, minced 1 Tbsp. Cilantro, chopped Pinch of Crushed Red Pepper 1 Tbsp. Canola Oil PREPARATION In a bowl combine the shrimp, scallops and canola oil. When ready to cook, start Traeger on 180 degrees. Arrange the shrimp and scallops on the grill and smoke them for 45 minutes. While they are smoking, prepare all the other ingredients, and place in a large mixing bowl. When the shrimp and scallops are finished smoking, turn the grill up to 325 degrees and cook an additional 5 minutes, to make sure they are fully cooked. Tandoori Shrimp

| INGREDIENTS | 2 lbs jumbo shrimp, peeled [leave tails on] and deveined 1/2 cup freshly squeezed lime or lemon juice 1 1/2 teaspoons Cajun Rub 1 cup plain [greek] yogurt 1/4 cup heavy cream, half and half, or milk 1/2 of a small onion, coarsely chopped 3 cloves garlic coarsely chopped 1 1″ piece of fresh ginger peeled and coarsely chopped 2 teaspoons chili powder 1 1/2 teaspoons ground cumin 1 teaspoon ground coriander 1/2 teaspoon ground turmeric a few drops of red and orange food coloring [optional] 4 tablespoons butter melted thinly sliced red onions lime wedges sprigs of cilantro for serving | DIRECTIONS | Put the shrimp in a large resealable plastic bag. Combine the lime juice and Cajun Rub. Pour over the shrimp and refrigerate for 15 minutes. In the meantime, combine the yogurt, cream, onion, garlic, ginger, chili powder, cumin, coriander, and turmeric in an blender jar and process until the mixture is fairly smooth. Fish Tacos with Tropical Slaw

You would never know these fresh and tasty tacos came from the freezer! Fish tacos with tropical slaw are healthy, easy, and delicous! Frozen Mahi Mahi (Trader Joes) Adobo sauce Fish seasoning/rub/Tajin Tropical slaw Purple cabbage, thinly sliced Mango, chunks Pineapple, chunks Green onions, sliced Cilantro, finely chopped Red pepper flakes   Dressing 1/2 C Orange Muscat Champagne Vinegar 1/2 C Grape Seed Oil 2 TB sugar S&P Thaw Mahi Mahi and drizzle with EVOO. Spread a little adobo sauce (very spicy) on fish with your favorite seafood rub/Tajin/S&P. Grill until medium rare and still moist. Add all slaw ingredients together. Mix dressing and put over slaw mixture. Let it sit in the fridge for a couple of hours before serving. Char or grill corn/flour tortillas Add fish, slaw, avocado, lime juice, lime zest, and cotija cheese to tacos. Enjoy!

Sriracha and Lime Salmon

My girlfriend brought me this dish when I had my last baby and it’s been my favorite salmon recipe ever since. It’s really that good! Zest and juice of 2 limes 3 TB maple syrup 2-3 TB Sriracha 1 tsp coarse sea salt 2 pounds salmon fillet, skin removed Coarsely chopped cilantro Preheat oven to 425°. In a bowl, whisk zest, juice, syrup, Sriracha, and salt. Place salmon in a baking dish and pour mixture over top. Let sit for 15-20 minutes. Roast until cooked through and flaky, 15 minutes. If grilling or putting on the Traeger, marinate fish with 3/4 of sauce. Grill for 15 to 20 minutes and then top with remaining sauce and sprinkle with cilantro.

Seafood Gumbo

Seafood Gumbo is a labor of love. It was delicious and had amazing flavors but you may want to save it for a special occasion or when you’re feeding a large crowd. Below is the recipe I “kind of” followed. I made some changes (of course) but this should give you a pretty detailed idea. 3/4 C vegetable oil 1 C all-purpose flour 1 1/2 C finely chopped onions 3/4 C finely chopped green bell peppers 3/4 C finely chopped celery 2 TB minced garlic One 12-ounce bottle amber beer 6 cups Seafood stock Dash of dried thyme 2 bay leaves 2 tsp Worcestershire sauce Dash of salt 1/2 teaspoon cayenne pepper 1 pound raw shrimp and/or scallops 1 pound white fish fillets cut in big chunks (your favorite kind) 1 pound clams Crab legs 1 package andouille sausage 1 package frozen okra Chopped fresh parsley Chopped green onion Rice, for serving Place a stockpot over medium heat, and add the oil.
