Baked Apple Cider Doughnuts

We went for the healthy option on this National Doughnut Day. We baked these delicious apple cider doughnuts and even used apple sauce instead of oil. I have to admit they taste more like a muffin but everyone loved them. 2 cups apple cider 2 cups all-purpose flour 1½ teaspoon baking powder 1½ teaspoon baking soda 1 teaspoon cinnamon Dash of fresh nutmeg ¼ teaspoon salt 1 egg 2 tablespoons butter, melted ⅔ cup light brown sugar ½ cup milk (add a little vinegar to make buttermilk) 2 tablespoons apple sauce (we used baby apple oatmeal) 1 teaspoon vanilla extract Simmer apple cider until reduced to 1/2 C. Add all dry ingredients together and mix Add all wet ingredients and mix. Add wet ingredients to dry mix until combined. This was originally for doughnut holes but you can use mini muffin tins, doughnut trays, I used some fall molds I had. Anything works! For the icing I used 1/2 C maple syrup, 1/4 C butter (melt together). Then add 1 cup sifted powdered sugar. I added some cream cheese too….

Christmas S’mores

These Christmas smores were a big hit on a rainy day! Melt white chocolate and dip each side of graham cracker in the white chocolate then into crushed candy canes. Once you’ve finished dipping put in fridge to chill and let chocolate form. Roast marshmallows and add chocolate as usual. These were yummy! *Another favorite was using Pretzel crisps instead of Graham crackers. The salty, sweet, and chocolate were the perfect combo.

Peanut Butter Balls

Nothing says the holidays like a Sunday full of Peanut Butter Ball making at my house. Another family tradition I’ve carried on, and the only homemade item I’ll be serving for my Christmas Soiree this weekend (for 200). These are easy and delicious and I get in big trouble if I don’t have them around over the next couple of weeks. 2 C creamy peanut butter 4 C powdered sugar 1 C softened butter 2 tsp vanilla 2 bags of milk or semi sweet chocolate chips 1 Tb canola oil Take first four ingredients and beat until creamy. Form one inch balls and place in freezer. Melt chocolate chips and oil until melted in sauté pan. Turn off heat and with your hands dip frozen balls in chocolate. Once chocolate starts to thicken, turn heat on for another minute until warmed through. Continue dipping until all are done. Lay on parchment paper and stick back in fridge or freezer to set. They keep well in freezer or fridge but trust me they won’t be there for long!

Banana Egg Nog Bread Pudding

I had a meeting at my house last night and dreamed up this banana egg nog bread pudding to serve that was super easy and amazingly delicious! You can put this in a casserole dish, but I liked serving individual cups baked in muffin tins. 4 large eggs 1 C whole milk 1C egg nog ¼ cup brown sugar 2 teaspoons vanilla extract 1 tsp kosher salt 6 cups cubed challah bread (½ loaf) 5 ripe bananas, peeled and cut into coins 3 Tb white sugar Mix first 6 ingredients together in a bowl. Add bread, mix together, and put in refrigerator until bread has soaked in all of the liquid (a couple of hours). Spray muffin tins very well. Add 3 sliced bananas and 1 scoop of bread mixture then repeat ending with bread mixture. (My muffin tins were very full and close to overflowing). Bake for 20 minutes at 350 then sprinkle with sugar and put back in for another 15 minutes or until they are golden brown and liquid has been cooked through. I used Mrs. Richardsons…

Valentine Doughnut Holes

These Valentine Doughnut holes are my kids favorite activity this time of year. Use store bought powdered or glazed doughnut holes (glazed works better). Thin out a tub of store bought frosting with a Tablespoon or two of milk. You want it thinner but not too runny. Put sprinkles in different bowls. Dip each doughnut in frosting and let your kids roll them in their favorite sprinkles! Zurchers or party stores have the best Valentine sprinkles right now.
