Grilled Dessert Pizza

Bribing my kids to NOT help in the kitchen. Grilled pizza dough -Pillsbury dough would work too- with butter instead of EVOO (stretch room temperature dough into desired shape and brush both sides with butter. Grill on high for 2-3 minutes then flip sides for 1 minute). You can also bake at 400 degrees for 8 minutes (one side). National Pie Day

National Pie day at our house! I’m in charge of dessert for a dinner this weekend. I started with the idea of Banana Cream Cheese Pie then decided I’d make a bunch of different mini pies with all different kinds of fruit. My base is cream cheese pie but you can add anything you want! My favorite is layered bananas coconut Dulce de Leche. Crust- Keebler Graham cracker crumbs (follow package directions) Mold into ramekins 1 (8 ounce) package cream cheese, at room temperature 1 (14 ounce) can sweetened condensed milk 1/2 cup fresh lemon juice 1 teaspoon vanilla extract Using a hand held electric mixer, cream the cream cheese until light and fluffy, about 3 to 5 minutes. Slowly add the milk mixing on low speed until well combined. Stir in the lemon juice and vanilla. Layer and top your mini pies with your favorite fruits. Refrigerate for 2 hours.

Churros

Not the healthiest breakfast we’ve ever had.  I was experimenting for a get together tomorrow and these crunchy on the outside, chewy on the inside Churros did not disappoint 1 cup water 1/2 cup butter or margarine 1/4 teaspoon salt 1 cup all-purpose flour 3 eggs, beaten Vegetable oil, for frying 1/4 cup sugar 1/4 teaspoon ground cinnamon To make the churro dough: Combine 1 cup of water with the butter or margarine and the salt in a saucepan and bring to a boil over high heat. Using a wooden spoon, stir in flour. Reduce the heat to low and stir vigorously until the mixture forms a ball, about 1 minute. Remove the dough from the heat and, while stirring constantly, gradually beat the eggs into the dough. Heat about 2 inches of oil in a heavy, high-sided pot over medium-high heat until the oil reaches 360 degrees F. ( I just tested a little piece since I don’t have a thermometer). Easy Beignets

So delicious, so naughty, and way too easy!! These beignets are the perfect semi-homemade dessert and perfect for a special occasion! I made these for a fun New Orleans collaboration with @shabbyapple and love working with them!! 1 package flaky biscuits 1 C butter flavor shortening, for frying 8 tablespoons butter 1 C dark brown sugar, packed 3 Tb milk 1 tsp vanilla 1⁄4 C toasted walnuts, chopped Melt butter in a medium saucepan over medium heat. Add sugar and whisk until sugar melts and mixture begins to boil, about 5 minutes. Stir in milk, vanilla, and pecans until smooth. Set aside. Separate biscuits and cut into forths. In heavy bottomed skillet, melt the shortening over medium heat. Fry biscuit quarters in batches until golden on each side (this will take 30 seconds or so so watch and flip quickly. Dust generously with powdered sugar and serve with sauce. You can also reheat before serving if not eating right away.

Easter Bird Nests

2 weeks until Easter! I love Springtime and thought these darling little nests were the perfect treat to bring to my neighbors on the first day of Spring. 1 bag Coconut Flakes 4 Egg Whites 1/4 tsp salt Mix these ingredients together and put in separate bowls if you want to use food coloring to dye coconut. Generously spray mini muffin tins with coconut oil or Pam and fill each tin with 2 Tb of coconut. Push down until it forms a little bowl. Bake at 300 for 25-30 minutes or until the coconut starts to turn golden on top. Fill nests with melted dark chocolate and your favorite Easter candy. So simple! (Thanks Martha)

Pound Cake French Toast

En route to the Middle East today and thought I’d leave you with this parting recipe. Pass it along to your family for Mothers Day!  Store bought pound cake, unsliced (I also used poppyseed so use your favorite). Egg milk cinnamon vanilla (use your normal egg mixture you use for French toast) Whipped cream Lemon Curd Fruit for topping Maple syrup Cut thick slices of pound cake and dip in egg mixture until soaked. Put on griddle for 2-3 minutes on each side or until cooked through. Add lemon curd to whipped cream (1-2 TB per 2 C of whipped cream). Smear plate with lemon curd, plate French toast and top with berries, whip cream, and maple syrup!
