Ingreients: Steel cut oats Prepared Polenta (sold in logs at most grocery stores) Parmesan cheese Sharp cheddar cheese Poached or Fried egg S&P Method: Make oatmeal according to directions and add a couple of spoonfuls of polenta and mix through. Pumpkin Gingersnap Oatmeal

I’ve  been loving oatmeal for lunch lately and this is my favorite combo so far. INGREDIENTS: Instant steel cut oats Almond milk Ricotta cheese Pumpkin Butter Toasted Pecans Crushed Ginger Snap Cookies METHOD: Make oatmeal according to package directions and use almond milk instead of water. Top with Ricotta (use good quality), pumpkin butter, pecans, and crushed ginger snap cookies. *All ingredients can be found at Trader Joes. Steel Cut Oats with Vanilla Mascarpone and Berries

Happy Sunday! We took the time to make traditional steel cut oats and it was delicious. Lazy Sunday mornings are the best! Follow package directions for making oats but use almond milk instead of milk or water. Add a dash of maple syrup Dash of salt Dash of butter if you’re really going crazy Top with fresh fruit and Madagascar Vanilla Mascarpone cheese (and one more dash of salt)! Have a wonderful day!

Steel Cut Oatmeal

A delicious and quick Steel cut oats (that your kids will love too): Mix unsweetened vanilla almond milk with your favorite steel cut oats in the microwave or stovetop (@courtneyzwick turned me onto Country Choice Organic which is now my favorite -it’s what they use at Jamba Juice) Mix in more almond milk to get desired consistency A dash of kosher salt Maple syrup And a little bit of butter Top with TJ pumpkin spiced pumpkin seeds

Brûlée Oatmeal

We’ve been lighting everything on fire over here with my new Brûlée torch. This mornings oatmeal was a favorite! Trader Joes frozen oatmeal Slice bananas and apples, cover in sugar and torch away! Other brûlée favorites: Marshmallows Prosciutto Sweet potatoes Macaroons Oranges Cinnamon sugar toast I bought my torch on Amazon for $19.99 but don’t forget to buy the butane gas too. It’s a great Christmas present and very easy to use. My kids have loved bruleeing everything in the kitchen!

Baked Oatmeal

Healthy breakfast, after school snack, and huge hit with the whole family! Mix- 1 C quick cook steel cut oats 1 C quick cook oats Dash of salt Dash of cinnamon /nutmeg 1 tsp baking powder In another bowl mix- 2 C almond milk/milk 1 egg 1 tsp vanilla Dash of maple syrup Layer 1/2 of banana slices and berries on greased 8 x 8″ pan Layer half of dried oat mixture over berries Repeat Pour milk and egg mixture over oats and Barry/bananas making sure everything is combined. Bake at 375 for 40-ish minutes (you can add a layer of brown sugar for the last five minutes of cooking) Pour coconut milk over each individual serving.)

Overnight Oats

Serving a healthy breakfast at a morning meeting today! As great as muffins and doughnuts are, you’re guests will appreciate a healthy breakfast even more. This is a great way to serve oatmeal in the summer too. One serving: 1/3 C Old Fashioned Oats 1/3 C almond/coconut milk 1/3 C Plain Greek yogurt 2 TB Chia Seeds Small dash of vanilla Dash of Maple Syrup Dash of salt Cover and refrigerate overnight. You may need to add a bit more liquid in the morning to achieve your desired consistency. Top with any toppings you like!

Overnight Oats

Overnight oats are a family breakfast favorite but lately I’ll do a big scoop with a little peanut butter, 1/2 banana, coconut, dash of cinnamon and mini dark chocolate chips for dessert. It’s the perfect healthy substitute for ice cream and can curb any sweet tooth! I normally dump a couple cups of oats, 1/2 C of chia seeds, almond milk, a big scoop of Greek yogurt and a dash of maple syrup but if you really like measurements (this is for one serving, but trust me you’ll want to make enough to share). Mix and refrigerate overnight- 1/3 C Old Fashioned Oats 1/3 C almond/coconut milk 1/3 C Plain Greek yogurt 2 TB Chia Seeds Small dash of vanilla Dash of Maple Syrup Dash of salt ETC. Add berries, peaches, or sliced almonds. Top with bananas and brown sugar and broil to caramelize. Top with granola or dried fruit. Swirl PB and Nutella and warm it emoji .
