Ingreients: Steel cut oats Prepared Polenta (sold in logs at most grocery stores) Parmesan cheese Sharp cheddar cheese Poached or Fried egg S&P Method: Make oatmeal according to directions and add a couple of spoonfuls of polenta and mix through. Breakfast Sandwich with Avocado and Egg

Is there such thing as a hangover if you don’t drink? If so, 🙋🏼. Exercise and this breakfast sandwich should get me through a day of Halloween parties. Your favorite bread Spinach, chopped Eggs, over easy Avocado, smashed Dressing for spinach- Lemon juice EVOO S&P Top with Sriracha salt ETC. The last thing I wanted to do when I woke up this morning was exercise. I put my workout clothes on and committed to 10 minutes. 40 minutes later, I was so happy I had started. Endorphins work wonders! (PS- this is great carb free without the bread)

Pumpkin Gingersnap Oatmeal

I’ve  been loving oatmeal for lunch lately and this is my favorite combo so far. INGREDIENTS: Instant steel cut oats Almond milk Ricotta cheese Pumpkin Butter Toasted Pecans Crushed Ginger Snap Cookies METHOD: Make oatmeal according to package directions and use almond milk instead of water. Top with Ricotta (use good quality), pumpkin butter, pecans, and crushed ginger snap cookies. *All ingredients can be found at Trader Joes. I’m loving another one of my @taipantrading trays they really have such unique serving dishes.

Cinnamon Almond French Toast

My favorite new Costco find is Hoody’s Cinnamon Toasted Almonds. Using them with this French toast was genius if I do say so myself! 😊 INGREDIENTS: Brioche bread, sliced Cinnamon Almonds, ground Egg Almond milk Dash of vanilla Cinnamon Dash of salt Maple Syrup METHOD: Cut thick slices of bread and soak in egg mixture (eggs, milk, cinnamon, vanilla, and salt). Pulse almonds until fine in blender. Dip bread into ground almonds, shake off excess and cook on buttered griddle.

Caramelized Apple Pancakes

Sunday mornings are for pancakes, PJ’s, and family. We’re hunkering down for a great day of #ldsconf and these pancakes! Caramelized Apple Pancakes INGREDIENTS: Kodiak Cakes Power Cakes mix Pecan Pumpkin instant oatmeal, Trader Joes Apples, sliced Butter or butter spray Honey or brown sugar Kosher salt Pumpkin Spice Granola, Trader Joes Maple syrup METHOD: For every 2 cups of prepared pancake mix add one packet of pumpkin oatmeal and mix. Cook pancakes as usual. Cut apple into very thin slices. Sauté with a little butter or butter flavored spray on medium heat. As they start to soften, add honey or brown sugar (or a little of both). How much depends on how sweet you want your apples. I didn’t do too much just enough to coat. When apples are Caramelized take off heat and add a dash of salt. Top pancakes with apples, granola, and maple syrup!

Peach Chia Seed Smoothie

Breakfast, dessert, or afternoon snack? All of the above and it’s beautiful, delicious, and so easy! CHIA PUDDING 1/4 Chia seeds 1 C of your favorite milk (almond or coconut) 1 C of your favorite yogurt (Chobani plain 0%) 1 tsp Vanilla extract Dash of Maple syrup Dash of Salt Cover and refrigerate mixture for a couple of hours. PEACH SMOOTHIE- blend 1 banana 2 peaches Frozen berries Handful of spinach Almond milk Ice Layer chia pudding, smoothie, and chopped peaches!

Smoked Salmon Tartine

I’m staring at piles of laundry so of course I decide to make myself lunch instead! Loved it so much it’ll be dinner too. Baguette, sliced down the center Plain cream cheese or mayo (yes, add just a little) Smoked salmon, fresh salmon, leftover salmon. Any and all work. Arugula or spinach with lemon juice and EVOO Peas Top with a little more lemon juice and generous dash of salt and ground pepper.

Banana and Granola Pancakes

Do you ever put granola in your pancakes? Or do you ever put coconut ice cream in your maple syrup? You should! Pour prepared pancake mix on griddle. Add banana slices and granola. Flip. The bananas will caramelize and it’ll toast the granola. Top with more granola and pineapple chunks. Melt ice cream, mix with maple syrup and try not to eat 5!
